Grilled cheese sandwich that has ricotta cheese in it? Yes, it is possible and it also very scrumptious.
Don’t take my word for it. Make it yourself or listen to my family members. This grilled cheese sandwich is a staple around my household, especially when the weather outside is cold and frightful. When I pair this sandwich with my homemade tomato soup, I am seen as a cook sent from heaven.
Alright, I am not from heaven, but, very close to it (New Jersey). I do share everyone’s love for this classic “snow day” comfort food.
Lately, I have been trying to make classic recipes but put a simple twist on the dish. The ricotta cheese is the twist on the classic grilled cheese sandwich.
Be warned, though, the ricotta cheese makes the grilled cheese sandwich very heavy in the calorie department. This just means that you will spend an extra hour at the gym. So, no big deal, right?
Now, a great grilled cheese sandwich deserves to be paired with the best tomato available on earth.
Enter: The Campari Tomato!
The Campari tomato is light on acidity, great on sweetness and good for the human body. So, at least, I can claim that this sandwich has a healthy component.
Most people don’t really associate the Rosemary and Olive Oil demi loaf with any sandwiches. People are normally used to only seeing this bread in Italian restaurant given away as free appetizer.
It can easily be found at the baker section of your supermarket. However, if you ever have two and a half hours, feel free to make this bread at home. There is nothing better than smelling the aroma of fresh rosemary bread coming from the kitchen. The best recipe I have found for this bread is from Table For Two’s Blog.
Today, I have found a better use for this bread. Just look at that wholesome loaf goodness! It makes for a very crispy grilled cheese sandwich and also prevents the whole dish from getting too soggy.
However, there is no way around it. This is one messy sandwich.
You are going to need lots of napkins for this grilled cheese sandwich with ricotta
Recipe Details (Makes Grilled Cheese Sandwich for 2)
Total time to make: 20 minutes
- 4 slices of Rosemary and Olive Oil demi loaf
- 1 cup of ricotta cheese
- 2 slices of Jalapeno Jack cheese
- 2 Campari tomatoes
- 1 tsp of fresh peppercorns
- 2 tsp of salt (or to taste)
- 1 tsp of ground oregano
- 1/2 tsp of dried rosemary
- 1 tsp of your favorite hot sauce (optional) – 1 tsp of pine nuts – 1 tsp of olive oil – Cooking spray for the Grilled cheese
- Take the Campari tomatoes and place them in a baking sheet
- Drizzle the tomatoes with olive oil
- Add a few flakes of the rosemary and whole peppercorns. Leave the rest for the sandwich
- Add a pinch of salt to these tomatoes
- Set the toaster oven to broil and allow the tomatoes to cook for about 5 minutes. Don’t leave them there for too long because you don’t want to cook them.
- Remove from toaster oven and allow them to cool for a few minutes.
- In a mixing bowl, add the ricotta cheese
- Add the oregano flakes to the ricotta cheese
- Add the remaining peppercorn
- Add the salt and pepper
- Add the capers
- Stir well and leave aside for about 10 minutes
- Heat a pan on the stove and spray with cooking oil
- Grill the bread slices on one side and turn them
- On the grilled side, place 1 slice of Jack cheese
- Top two slices with the ricotta cheese mixture
- If you like more fresh ground crushed peppers, add them now.
- Lightly crush the roasted tomato with your hand and place it on top of the sandwich
- Top with pine nuts that are freshly roasted
- Close the sandwich with the other toasted Rosemary bread
Serve the sandwich with the hot sauce on the side. It works great as a dipping sauce.
